Eton Mess - The quick way!

Few desserts say Summer like Eton mess. Not only does it taste VERY good but it's super quick and easy to make.

Shopping list

  • 450g strawberries, quartered.

  • 1 tbsp caster sugar.

  • 4 ready-made meringue nests, broken up (you can make your own but this is the super quick way).

  • 400ml double cream, softly whipped.

Quick utensil check.

  • Chopping board.

  • Knives to chop – whatever are your go to ones.

  • Blender

You're ready to whip, crush and mix.

  • Whip the double cream with the sugar until it is soft and thick.

  • Break the meringue nests into chunks and stir into the cream.

  • Purée half the strawberries in a blender and then add and mix into the cream and meringue mixture.

  • Divide the mixture into four glasses.

  • Pop the remaining strawberries on top as a garnish and a sprig of mint.

You're ready to serve. Enjoy!
